Disabling/Greying out the Category Field

Hello,

We're having some dificulties with clients creating their own requests using our templates. Here's the situation:

We've created multiple diferent templates, each with their own category, subcategory, and items. In each template the
category is always chosen by default depending on which template is chosen. In each template we also have the field of "group" pre-defined
depending on the template, and hidden to the user, for auto-assigning purposes...

For example, we have a Hardware Service Catalog, within it we have a Hardware Support template. For this template we created a Category called Hardware Services, which is choosen by default in the template. The user only has to choose the subcategory (ex. Troubleshooting, Installation, Configuration) and the item (ex. PC, Laptop,Scanner, ect) And in the group field we have choosen the "On-Site" support group, so that any request created in that template is automatically assigned to that group.

Upon opening the portal to our clients, they've started choosing whichever template they want, changing the category to their liking, and therefore nullifying the auto-assign mechanism thru tempaltes, that we found most effective for our situation and company. We thought we could disable the user from modifying the Category field, but noticed that would cause them to not be able to modify the subcategory and item field either. We really need to be able to restrict this field, is there any way of doing this?
